THE CEREMONY


At the bar, Salvaje follows the same philosophy that defines its table a balance between origin & mastery. Root & Elevation brings together two worlds: Pachamama and Shuhari.

Pachamama represents the Latin American root. A respect for land and raw materials. Shuhari introduces Japanese influence and philosophy.

At the bar, this dialogue takes form in cocktails that feel grounded yet precise. Familiar elements are re-interpreted through balance, clarity, and control. Each drink is composed to unfold gradually, encouraging presence.

Chef Fermín Azkue brings a bold and innovative spirit to Salvaje Dubai, combining his Venezuelan-Basque roots with a deep appreciation for Japanese techniques. His approach celebrates the harmony of flavors, textures, and presentation, creating dishes that are as visually striking as they are delicious.

With experience in Michelin-starred kitchens across Europe, Chef Fermín has honed a mastery of precision and technique while cultivating a creative flair that allows him to push the boundaries of Japanese–Latin cuisine.

Executive Chef - Salvaje Group Dubai

Since joining Salvaje Group in 2024, Chef Koyi has become the driving force behind the culinary evolution of Salvaje Dubai and Arrogante Dubai.

He leads with a creative approach shaped by his Peruvian roots and Japanese heritage, bringing a distinctive fusion style that defines the brand’s identity.
His background spans some of the world’s most respected kitchens, including time at Lima’s celebrated Maido, where he strengthened his foundation in precision, flavor layering, and modern technique. This global experience allows him to reinterpret Japanese–Latin cuisine with confidence while guiding Salvaje toward a more contemporary and expressive culinary direction.
With Chef Koyi at the helm, Salvaje continues to build a reputation for bold dishes, elevated dining experiences, and a dynamic culinary point of view that stands out in Dubai’s competitive restaurant scene.
